Luke Scrimshaw – Co-Owner & Head Chef/BOH manager

Luke is one of the co-owners of Totem and also leads the kitchen as Head Chef. He is responsible for the food direction, menu creation, and overall kitchen operations. 

His focus is on high-quality, freshly prepared dishes with a modern style and strong attention to detail. Luke ensures the food at Totem consistently reflects the standard and identity of the business.

Janaid Shaban – Co-Owner & FOH Manager

Janaid manages day-to-day FOH operations, front of house service, and overall customer experience. His role ensures Totem runs smoothly and maintains a consistent, welcoming environment for every guest.
